Why?

Eating Light and Eating Right on Monday


Chicken Tortilla Soup




Ingredients:

1 onion, chopped
3 cloves of garlic, minced
1 T olive oil
2 tsp chili powder
1 tsp dried oregano
28 oz. crushed tomatoes
10.5 oz condensed chicken broth
1 1/4 c water
1 c corn
4 oz chopped green chili peppers
15 oz black beans
2 cooked chicken breasts, diced

Saute onion and garlic in olive oil until soft. Stir in chili powder, oregano, tomatoes, broth, and water. Bring to a boil, then simmer for 10 minutes. Stir in corn, chilis, beans, and chicken. Simmer for 10 minutes.

Soup can be topped with tortilla chips and cheese.

Recipe makes 5 - 6 servings
